I had a small seedless watermelon that was a little overripe for my taste (grainy) and I was about to toss it into the compost pile and thought why not make these popsicles instead? It was incredibly sweet, but the texture wasn't what I prefer in watermelon, but it made no difference for the pops! I will have to see if my kids like them. My littlest loves watermelon, but his sister is not so much a fan. I tried watermelon lemonade and she didn't fall for it, even though it was PINK. Oh well! These are in my freezer right now!
