Another Cold Salad For Another Hot Day
We’ve been eating a lot of cold salads lately because the weather has been so hot and humid. I especially like this salad because it uses ingredients I always have on hand. The carrots, green onions, and apples make it colorful, and the spicy brown mustard adds an unexpected “kick.” Everyone really likes this one. Plus it’s inexpensive and quick to make!
Ingredients
2 cups cooked chicken, chopped
2 cups carrots, grated
2 tablespoons onion or green onions, finely chopped
2 apples, unpeeled, cored and chopped
3 stalks celery, chopped
2 teaspoons spicy brown mustard
1/2 cup mayonnaise or salad dressing
salt and black pepper to taste
lettuce or mixed greens
1 tablespoon parsley, chopped
Combine chicken, carrots, onions, apples, and celery. Mix mustard into the mayonnaise or salad dressing and add to the chicken mixture. Toss lightly and season with salt and black pepper. Serve salad on lettuce or mixed greens. Sprinkle with chopped parsley.
