Luncheon Chicken Salad
It has been very hot and humid here, and a cold salad seemed like a great idea yesterday. After searching through some recipes for main dish salads, I couldn’t decide between Luncheon Chicken Salad and Tropical Chicken Salad, so I ended up making them both. Even though both salads have some of the same ingredients, they taste very different… and both are delicious!
Ingredients
2 cups cooked chicken, chopped
2 cups carrots, grated
2 tablespoons onion or green onions, finely chopped
2 apples, unpeeled, cored and chopped
3 stalks celery, chopped
2 teaspoons spicy mustard
1/2 cup mayonnaise or salad dressing
salt and black pepper to taste
salad greens
1 tablespoon parsley, chopped
Combine chicken, carrots, onions, apples, and celery. Mix mustard into the mayonnaise or salad dressing and add to the chicken mixture. Toss lightly and season with salt and black pepper. Arrange salad on a mound of salad greens. Sprinkle with chopped parsley.

BOTH of these recipes sound yummy ~ I would have a hard time trying to figure out which one to try first! LOL With temps near 100 on Friday it will be the perfect chicken salad day! You have a lovely blog home ~ I really enjoyed my visit!
