My mother is 84 and found out she is allergic to Soy,Peanuts and Corn. The Mayo recipe will be a big help. The ease of the recipes is wonderful. She has to buy bread at health food stores, there is only one restaurant that has food not prepared with soy (in her area), and she is not eager to go back to baking her own bread, but these recipes should be a big help. I too made a change in the spices... my sister sent me a Holiday Spice Grinder from S Africa... it has cloves, orange peel... and a few other spices in it... I added 1 tsp of the grinder and 1 tsp of cinnamon... I made it before I went to bed... and was too tired to wait for it too cool.. so I had to wait until this morning to try it.. Something in your ingredients made science-magic happen (maybe the vinegar and soda?) -- wow! (Used 1/2 tsp each cloves, nutmeg, cinnamon, and 1/4 tsp ground ginger instead of allspice and added about 1/2 diced apple) Thank you for sharing this cake!
